02/25/09 Brian's Easy Custard

We have chickens around the place and have fresh eggs too. If you like custard like I do, you might try this simple recipe.

4 Eggs beaten well. Mix well with 2 cups milk, 1/2 cup sugar, 1 teaspoon vanilla, pinch of salt. Pour in individual Pyrex dishes. Sprinkle with nutmeg. You can also put a tablespoon or so of uncooked oatmeal (I like Snoqualmie Falls) in the bottom of the dish before pouring the mixture. Place bowls on a cookie sheet and bake at 350 for 45 minutes or until a knife stab comes out moderately clean. Better to overcook. Cool and eat. I like whole milk but for impurists you can cheat easily with 2% or skim. Add more or less sugar to taste.
